How to cook:

  • For the dough, mix cottage cheese, egg, sugar, salt, oil and mix until smooth. Sift flour into it, add baking powder and knead a soft dough. Put in the fridge while we prepare the filling and crumbs.
  • For the filling, mix cottage cheese, egg white and sweetener until smooth. Cut the nectarine into cubes.
  • For crumbs, combine rice flour, butter and sugar. Rub with hands into crumbs. ⠀
  • We make cheesecakes: we form balls from the dough and put it on a baking sheet covered with parchment paper. Press the top of the dough with a small glass to get the sides.
  • We prick the bottom with a fork and lay out the filling and nectarine.
  • Grease the sides with egg yolk and sprinkle with crumbs.
  • We send it to the oven, preheated to 180 degrees, for 30 – 40 minutes – until golden brown.
