Cheesecakes with cottage cheese, nectarine and crispy crust
Ingredients (for 4 pieces):
For test:
- Cottage cheese – 200 grams.
- Egg – 1 piece.
- Coconut or butter – 20 grams.
- Sugar – 30 grams or sweetener.
- Salt – a pinch.
- Rice or wheat flour – 80 grams.
- Baking powder – 1 teaspoon.
For filling:
- Cottage cheese – 150 grams.
- Egg – 1 piece (protein for the filling, and the yolk – to lubricate the pastries).
- Sugar – 20 grams or sweetener.
- Nectarine – 100 grams.
For crumbs:
- Rice flour – 20 grams.
- Butter or coconut oil – 10 grams.
- Sugar – 5 grams or sweetener.

How to cook:
- For the dough, mix cottage cheese, egg, sugar, salt, oil and mix until smooth. Sift flour into it, add baking powder and knead a soft dough. Put in the fridge while we prepare the filling and crumbs.
- For the filling, mix cottage cheese, egg white and sweetener until smooth. Cut the nectarine into cubes.
- For crumbs, combine rice flour, butter and sugar. Rub with hands into crumbs. ⠀
- We make cheesecakes: we form balls from the dough and put it on a baking sheet covered with parchment paper. Press the top of the dough with a small glass to get the sides.
- We prick the bottom with a fork and lay out the filling and nectarine.
- Grease the sides with egg yolk and sprinkle with crumbs.
- We send it to the oven, preheated to 180 degrees, for 30 – 40 minutes – until golden brown.
